Sure, it’s much easier to buy a can of mushroom soup that’s already fully prepared. But to be honest, anything prepared at home is better than processed food. This goes for taste as well as nutritional value. Every ingredient that you take is fresh to your knowledge so it's a win-win situation.
Using the Instant Pot to make mushroom soup is an efficient way to save time and energy. Compared to the traditional stovetop method, it requires way less time to cook it under pressure. Cooking it on the stovetop would take much longer to produce the same depth of flavor, not to mention requiring a lot of stirring too.

Butter – you could substitute olive oil, but butter lends such a nice flavor and helps the onions brown nicely.
Mushrooms – you can choose absolutely any kind of mushroom as per your preferences. But to get an amazing flavor, I would suggest you opt for cremini, shiitake, or porcini mushrooms.
Chicken broth – you can substitute beef broth or vegetable broth if you’d like.
Sherry – Sherry is a fortified Spanish wine that perfectly complements the flavor of mushrooms. I made a note not to use cooking sherry because it’s just not the same quality. I would choose a Sherry that you enjoy drinking too so it doesn’t go to waste!
How to Make Mushroom Soup
Let's get started with gathering the ingredients.
Take an onion and cut it into slices.
Take 12 oz of mushrooms and slice them as well.
Put 2 tbsp of butter and sliced onions into your Instant Pot and stir well. Now, put the remaining 4 tbsp of butter into pot as well.
Then, add the mushrooms and saute for 5 minutes.
Add 3 ¼ cups of chicken broth, 3 tbsp of Sherry, black pepper to taste and ½ tsp Kosher salt into your pot.
Add Parsley to taste. Set the Instant pot to Manual at high pressure for 10 minutes.
Then, do a quick release and carefully open the lid.
Your Instant Pot Mushroom Soup is now ready to be served. 🙂
- With a few tweaks, this Instant Pot Mushroom Soup recipe can also be made vegetarian or vegan! First, replace the chicken broth with vegetable broth, and it becomes vegetarian. If you want to make it a vegan mushroom soup, use olive oil in place of the butter.

Can I freeze this mushroom soup?
Yes, this Instant Pot Mushroom Soup can be frozen. Once it is fully cooled, move the dish to an airtight sealed container and freeze for as long as 3 months.
To defrost, you can slowly defrost in the refrigerator. From there, you can reheat it in the microwave or use the stovetop.
- 6 tbsp butter
- 12 ounce mushrooms sliced
- 1 onion thinly sliced
- 3 ¼ cups chicken broth
- 1 sprig parsley
- 3 tbsp sherry (not cooking sherry)
- ½ tsp salt
- pepper to taste
- Turn on the Instant Pot and select sauté.
- Add 2 tablespoons of butter and let it melt.
- Add in onions and sauté for about 2 minutes.
- Add remaining butter, mushrooms and sauté for 5 minutes while stirring occasionally.
- Add in chicken broth, sherry, salt and parsley.
- Close the lid and cook on high pressure for 10 minutes.
- When cooking time is complete, do a quick release.
- Open the lid and remove parsley.
