- 1 tbsp olive oil
- 1 red onion chopped
- salt to taste
- 4 cups vegetable broth
- 3 cups water
- 1 tbsp garlic powder
- 1 tbsp cumin
- 1 tbsp cajun seasoning
- 1 tbsp dried oregano
- ½ tbsp chilli powder
- hot sauce to taste
- 1 lb black beans
- 1 ½ cup rice
- Press saute and add olive oil.
- Add chopped onions and salt to taste and stir for 2 minutes.
- Add vegetable broth and water and stir.
- Add garlic powder, cumin, cajun seasoning, oregano, chili powder and hot sauce and stir.
- Add black beans and rice and stir.
- Cover the lid cook on high pressure for 28 minutes.
- When cooking time is complete, wait for a natural release.
